It begs the question of at what time does the defender have to look back at the QB? If a defender has been beet by a WR and is running to catch up and the ball is thrown in the air and he notices the wide receiver looking back towards a ball so he jumps in the air and happens to hit the ball is it pass interference if he never looks back?
